In 8 man areas, if I go with my standard hybrid WOH monk setup, the 3 necros from Sabway, what would I use for my 4 henchmen? Does it even matter?

There are any number of other options that work. Earthshaker warriors, Rt hybrids (resto or warder), and Barrage or BHA rangers all do pretty well. Bringing the Barragers is particularly funny if you're smiting, with battle standard, dwarf weapon, etc. Generally, stay away from Dervishes (except for Orders), Sins (AI for Moebius is terrible), and Monks (since you're one yourself). Anything else is worth playing around with.
For henchmen, bring an interrupter (if available), a warrior, and a monk (if necessary). Last slot(s) can be blood necro for BR, or E's and W's for damage.

Make your own build depending on the region your in. I suggest a necro MM for general use because it greatly takes pressure off your party with the minions, but when there arent corpses use a different hero.

Sab's 3 Necro team works.
I also had some success with a Nuker Ele, an MM, and an interupt/hex removal Mesmer.

Nuking has never worked well for me. I usually had a SF hero and they quickly kill their energy, even with glowing gaze. I'd have the ele go Mind Blast but if i did, i'd rather have my ele go air for blind.

My Hero nuker bar that works well enough...
[rodgorts invocation][incendiary bonds][glowing gaze][fire storm][glyph of elemental power][fire Attunement][elemental Attunement][death pact signet]
12/12/3 with Fire, Energy Storage, and Restoration.
Rarely falls under 40 energy.
You can replace Fire Storm with Fire Ball if you prefer. In NM, most enemies don't move, so I use Fire Storm.

If you're using an ele in the hero makeup, Mindblast+Rodgorts Invocation+GG outdamages and better supports an elementalist in the cause for better energy usage.
The Saab builds are good, even though I tend to swap a few spells on the 3 necros and I don't care for the death pact signet in heavy damage areas.
I think that as a monk, you can also use a MM, an Elementalist, and any other for the 3rd hero for the most part. Nothing is etched in stone when you're the monk.

I always use the following three heroes:
Olias -> Sabway MM (minion bomber + secondary protter)
Livia -> Sabway Healer
Melonni (Wounding Strike Build)
For Henchmen, I always take Devona, Cynn, Herta/Other Ele, Interrupt henchman (Mesmer or Ranger).
Using these, I've filled HM Hero Books in Eotn in 4 hours time..which isnt that bad.

Mind Blast fails on a hero, they'll use it as a direct damage spell and end up targeting enemy eles with it.

Actually, they target monsters with low energy. Mind Blast is veeeery good on Elementalist hero.

Basically one MM hero (with a good minion turnover) then two more Necros. The other two necros can be anything you want them to be, be it damage, shutdown, support or healing. The important fact is that you have a constant SR energy supply for your heroes, what they do is optional.

For some easier areas just use 3x Searing eles and you'll run thru everything pretty quickly.
